This was the first walnut cutting board in the series, followed by several improved versions. This one is made of whole piece of 8/4 thick walnut slab, 11 inch wide, 13 inch long, finished with walnut oil.
Walnut is not a common cutting board choice, it’s open pore become a huge problem when meet with water and oil. But what makes walnut appealing is its light weight and moderate hardness. A lightweight cutting board helps reduce effort during frequent washing. walnut is not very hard, much softer than maple or beech, so it won’t dull my knives so quickly.
The bottom was carefully shaped with a cutout on one side for a secure grip during washing. On the other side, a step was added that works as a handle, though it won’t be used as serving board, though it does serve as a temporary plate.
This board performs well overall, but has one drawback: when the bottom surface absorbs water, the board cups slightly, making it unstable on a flat countertop. This issue was addressed with improved bottom designs in subsequent cutting boards.
